We sat down for a chat with House Canteen at Opera Bar Head Chef; Mulianto.

Let’s get to know the man leading the way in our bustling House Canteen kitchen.

Meet Mulianto, otherwise known as Liong; Head Chef of House Canteen at Opera Bar. Liong has been part of Applejack for a number of years now, joining the RAFI North Sydney team as a kitchen hand before moving across to Darlinghurst for the opening of Taphouse, progressing to Head Chef there and now onto new adventures at the Opera House forecourt.

Let’s Chat…

Can you introduce yourself and tell us a bit about your experience in hospitality?

My name is Mulianto, though in hospitality most people know me as Mr. Liong, or simply Liong.

I began my hospitality career in 2016 and spent six years with Merivale working across venues including Queen Chow and MuMu. It was also where I met my mentor, Chef Patrick Friesen, who greatly influenced my approach to leadership and cuisine.

In October 2022, I joined Applejack Hospitality beginning my journey with the RAFI team as Head Kitchen Hand. In 2023, I became part of the opening team at Taphouse, where I later progressed into the Head Chef role.

Today, I’m proud to be the Head Chef at House Canteen at Opera Bar, where I lead and develop a passionate kitchen team.

What do you love about working in the hospitality industry?

For me, hospitality is about more than cooking or creating dishes. It’s more about building a strong, positive team culture. When you invest in people and create an environment where the team feels supported and motivated, that passion naturally translates onto the plate. A great team delivers great food and ultimately, the best possible experience for our guests.
