Meet The Applejack Team: Patrick Friesen, Director of Culinary.
As the Director of Culinary for Applejack Hospitality, Patrick Friesen has been instrumental in elevating the group’s culinary offerings since joining the team in April 2022. With a wealth of experience under his belt, including his tenure as Executive Chef for Merivale venues like Queen Chow, Patrick has brought his expertise and passion for innovative cuisine to Applejack.
Patrick has overseen the launch of two RAFI venues in North Sydney and at URBNSURF Sydney, as well as the revamp of the historic Taphouse pub in Darlinghurst. His leadership has been crucial in shaping the food concepts and elevating the dining experiences across Applejack’s diverse portfolio of venues.
Patrick’s culinary journey has been marked by a commitment to excellence and a focus on sustainable, locally-sourced ingredients. After consulting on the new menu for Forrester’s, where he introduced the now-infamous Big Yorkie that has become a weekly staple and highly sought-after dish at the pub, Patrick was eager to join the Applejack team permanently, eager to push the boundaries of what’s possible in the Sydney hospitality scene.
In an interview with Broadsheet, Patrick shared his excitement about the opportunity to contribute to Applejack’s continued growth and evolution. “I’m thrilled to be part of the Applejack family and to have the chance to put my own stamp on the culinary direction of the group,” he said. “There’s so much potential here, and I can’t wait to see what we can achieve together.”
With Patrick’s leadership and culinary expertise, Applejack’s guests can look forward to even more innovative and exciting dining experiences in the years to come.
