Meet The Applejack Team: Patrick Friesen, Head of Culinary.
Let’s get to know Patrick a little better, he chatted to Broadsheet and GoodFood about all things Applejack, his career, and his role as Head of Culinary.
Since starting in April, Patrick has been a significant part of the Applejack team, leading our kitchen teams to new heights, whilst also steering the direction of our newest restaurant & bar, RAFI North Sydney.
Patrick comes with years of culinary experience, most notably as a former Executive Chef for Merivale including venues such as Queen Chow. After consulting on Forrester’s new Menu, Patrick was keen to join the team permanently, now overseeing all things Culinary for Applejack.
Patrick has already played a significant role in leading our kitchen teams to new heights, mentoring and developing chefs as well as overseeing the overall food direction for the group! With a strong emphasis on premium local produce and a shared commitment to sustainability, Patrick is has already made a significant impact on all food across the group.
