Australian Truffle Season With Patrick Friesen

Australian Truffle season is here, and we’re celebrating with two mouthwatering specials at Applejack.

We chatted to our Head of Culinary, Patrick Friesen, to talk about all things Australian truffles, his recent trip truffle picking, and the delicious specials available this Winter.

With a rich, earthy & unique flavour profile, Australian truffles are a delicious addition to almost any meal. We are serving up two delicious specials this Winter at The Botanist Kirribilli and Bopp & Tone, keep reading to find out what they are!

 

Patrick recently ventured on a truffle-picking trip to Oak Valley Truffle Farm in Manjimup, WA, where he picked, tasted, and learned about all things truffles.

Let’s Chat…

Tell us about your recent trip to Western Australia:

“At the end of June, I travelled to Manjimup, WA to visit Oak Valley Truffle farm. The trip was hosted by Debbie Oliver of Lady Truffle and Paul Fowler of the Manjimup Gateway Hotel.

It was a fantastic weekend of time with like-minded chefs, farmers, growers, and eaters. We got a tour of Bevan’s marron farm and got to experience draining the pond and catching live marron, a walk through the oak and hazel forest with trained dogs hunting for truffles, unsuccessful trout fishing at a trout farm, and lots of quality time getting to know some of our producers from this amazing area of the country. Four hours southeast of Perth is this lovely growing region. Avocados, apples, truffles, marron, wineries, and more. It’s a total food belt and supplies a lot of the country.”

 

 

From a truffle-covered sausage sizzle to truffle smores, Patrick has never eaten so many delicious truffles in his life and is looking forward to bringing his knowledge to our Applejack venues this season.

 

What do you love about Australian truffle season?

“I love everything about truffle season. I love the allure of the hunt, the magical aroma and the romanticism of truffles. They are still a mystery of nature and we need dogs to help find them for us. It’s theatrical in the way you shave them over a dish and the room stops to see and smell what’s happening.”
